Technicaly speaking, a curry is a dish in sauce. In Thailand, that sauce is coconut milk. The other key ingredient of Thai curries is the fragrant paste which gives it that mesmerizing flavour. Each Thai family has its own recipe of curry paste, and the essential ingredients are chillies, lemongrass, galangal, kaffir lime leaves and Thai shallots. In the green curry paste we use for this dish, there is also Thai basil which has a subtle taste of anise. Of course our curry paste uses Pum’s family’s recipe! To eat this dish properly, you pour the preparation over the rice as you eat it, never the other way round!
